My buddy, Dave, is absolutely obsessed with our Spicy Peanut Butter Sauce. He just can’t seem to get enough of the stuff, and he keeps pushing me to make it a permanent addition to the menu.
To be honest, he’s right. It is really good. And it makes pretty much anything you put it on taste a whole lot better.
For today’s fish taco special, I started with a grilled mahi-mahi filet, which seems to be everyone’s favorite type of fish. Then I made up a quick Thai-style coleslaw using red cabbage, shredded carrots, and green onions.
After that, we broke out that Spicy Peanut Butter Sauce recipe and made up an extra big batch. And when you combine those three elements, you get a fish taco that combines plenty of sweet from the peanut butter with the crunch of the coleslaw and just a slight kick from the red pepper flakes.
